Chardonnay & Marsanne


Origin
The white version of Roméo & Julieta was created in 2007 - the same idea as for the red: two different varietals coming from two different soils.
The Chardonnay grows in a cool and rather shady part, the Marsanne is exposed to sun on a stony soil


Terroir
Fontfroide, soil made up of fine sandstone

Chardonnay 40 %
Marsanne 60 %

Yield
30 hl / ha



Cellaring
Harvest mid-September, handpicking, careful transport under CO2 to the cellar,
gentle crushing, vatting with carbonic gas in stainless steel; fermentation at 17°C for 15 days;
early bottling to save fruit and aroma


Tasting Notes
Very pale yellow hue with green and golden highlights
Remarkable scent of tropical fruit (mango, lychee), peach and pear
Generous, subtle and elegant
Very fine aromatic length in the mouth.


At the table
Serve between 11° and 13° C Good with shellfish, grilled fish, Mediterranean seafood dishes, mussels
Excellent as apéritif
