TASTING AND VINIFICATION NOTESromeo_rouge.jpg

ROMEO ET JULIETA

VIN DE PAYS D 'OC

Merlot / Syrah

Origin
In 1998, I had the idea to vinify together those two different varietals issued from two different terroirs.
One part of the domain is influenced by a continental-mediterranean climate - there is the home of the Merlot.
The other part suffers from a typical mediterranean climate - dry and windy - that is where the Syrah lives.

T
Terroir
Fontfroide, soil made up of pink and brown sandstone, ranging from coarse and stony to very fine;
exposure cool and shadowy for the Merlot, warm and sunny for the Syrah.

Varietals
Syrah 50 %
Merlot 50 %

Yield
35 to 48 hl / ha

Cellaring
Vinified together by carbonic maceration mixed with destalked harvest after being handpicked;
extraction of 8 days at a temperature of 28 – 30° C; racked twice and smoothly filtered before bottling.

Tasting Notes
This twin-varietal has a dark red hue with garnet highlights and a nose that is spicy, mild and fruity, with hints of Kirsch, long and rich in the mouth, where the fruit persists without roughness – very pleasant.

At the table

Serve between 14° and 16° C Good with grills, and simple everyday fare
