Fontfroide et Boutenac soil made up of pink and brown sandstone, ranging from coarse and stony to very fine; cool exposure

Cellaring
“picking” 25th and 26th September (selection of certain parts of the concerned parcels), continued on 27th and 28th September at excellent maturity,
careful transport and crushing, vatting with carbonic gas in stainless steel vats.
After short cold maceration, part bleeding, than racking at 10 – 12° C for 24 hours, fermentation at 17° C for a maximum of 20 days


Tasting Notes
Pale, brilliant pink hue (candy pink); strong scent of very ripe fruit (wild strawberry, raspberry),
terroir present with warmth, honey and spices
Mouth outstandingly full, complex, very long and aromatic persistance (caudalies), many facetted.


At the table
To be drunk ideally between February and November, good development until 2 years after harvest.
To be served between 10 and 12° C, perfect as a relaxing aperitif or with a Mediterranean-type meal, goes well with colourful and carefully spiced oriental dishes, interesting with bouillabaisse
