Boutenac sandstone, very stony and shallow

Cellaring
Hand-picking at complete maturity, transport in 40 kgs tubs, whole grapes;
vatting by hand, vats previously saturated with CO2;
long carbonic maceration 14 to 16 days; careful racking away from air Smooth filtering at bottling, no wood


Tasting Notes
Beautiful deep ruby-garnet hue
Strong nose, powerful berry scent, with aromas of maceration
Mouth deep and persistent, supple, full
A wine for ageing which can easily be cellared for five to seven years


At the table
To be served at 17° C with sauce dishes (casseroles), grilled beef and lamb, and with cold cuts
