Central Corbières, near the Cistercian abbey of Fontfroide
The cliffs of Combelongue and the pine forest of St Jacques protect this vineyard from the heavy northern winds and provide a unique microclimate to those slopes of crumbled sand- and limestone.
Without wind old mediterranean grapes quietly develop undisturbed by chemical fertilizers.
A very careful vinification and a small yield create a sincere and untypical wine.
Carignan (100 years old) 75 %
Grenache noir 10 %
Syrah 15 %
Hand-picking in October grapes a little over matured, transport to the cellar in 40 kgs-tubs, carbonic maceration in cement vats.
Half of the wine aged in oak casks (new and “one-wine-casks”) for a period of 9 months.
The bottles are stored in an air-conditionned building.
Deep ruby coulour; nose of soft plant (Hare’s Ear) aroma, red preserves, cinnamon, black currant and cocoa; Mouth with a smooth attack followed by a ripe, spicy not too heavy wine with a very long finish

To be served between 16 and 18°C with lamb, beef or poultry and soft cheese
