PINEAPPLE to the power of 3!
serves 4

1 juicy pineapple
1 can of pineapple chunks
tub pineapple sorbet
juice of 1 lemon
2 dashes of brandy
several sprigs of mint

cut the pineapple into pieces, sprinkle with vanilla sugar, lemon juice and brandy, add the mint finely chopped
be careful not to overdo the mint to preserve the flavour of the fruit
mix well and set aside in the refrigerator
empty the can of chunks into your blender, process to a light mousse then keep in refrigerator

to serve:
place the sorbet on a plate and put the mousse in glasses (eg champagne)
finish off with the pineapple salad and garnish with a little mint

to accompany it:
a small glass of brandy - the same brandy as you used in the salad!
